Pickles and Preserves
Giardiniera

Ingredients: Jalapeños, red and green peppers, onion, celery, garlic, extra virgin olive oil, distilled white vinegar, oregano, black pepper, salt
This is a recipe inspired by Monica’s hometown Chicago, where giardiniera is served with almost everything, especially sandwiches and pizzas. It’s our go-to table pickle, our desert island pickle if you will! It’s great with everything: hummus, avocado, cheese, on salad, with eggs. Or straight out the jar, because it’s basically a salad of chopped vegetables packed in delicious extra virgin olive oil. Get more serving ideas in our post about Chicago-style hot giardiniera.
Top-tip: Randomly, you can get a Chicago-style hot dog at Flossie’s Beach Store down the road. Well worth a visit for their delicious food and friendly service. And yes, the hot dog is delicious with a spoonful of giardiniera!
Salsa Macha
Ingredients: Dried Mexican chillies (varieties vary, but usually a combination of guajillo, chipotle, ancho, and/or pasilla), olive oil, garlic, sesame seeds, almonds or walnuts, Mexican oregano, cider vinegar
Literally translated “macho salsa”. I think of it as a dried chilli pesto, and a great way to discover the joys of dried Mexican chillies. This isn’t super spicy, so feel free to use it generously as a garnish. It’s a great way to pep up tacos, greens, rice, eggs, anything (much like giardiniera). Seville Orange Marmalade

Ingredients: Seville oranges, water, sugar, citric acid, pectin
Nothing exotic here. Just straight up bitter seville orange marmalade. Magic with sourdough toast and good salty butter.
Dehydrated Food
Our dehydrated meals come out of love for enjoying delicious and nutritious food while backpacking. They’re plant-based, light weight, and can be prepared by simply adding boiling water.
